Black & White Photography: In Camera or Post Production

I watched this lily from my window daily and was waiting for the right time to photograph it. It is a natural light shot with a bit of fill at the front, which was used to darken the background.
The question that I’ve been asked a few times this week is: "should I shoot in black and white mode or convert my colored shots later into black and white on my computer?"
My approach to this has always been to shoot in full color and to edit later if necessary.
Here are my random tips, maybe this helps:-
1. Shoot in RAW
2. Shoot in Color
3. Low ISO
4. Plan when to Shoot
5. Composition
6. Wait for the right light
